Jaipur, India

Rajput cooking is represented in Jaipur and, as hunting was a big part of this type of cuisine, chargrilled and barbecue meats feature heavily. Laal maas − spicy Rajasthani goat curry − uses 45 chillies per kilogram of meat! Amazingly spicy, this curry is usually served with rice or flatbread and a range of accompaniments including raita (cooling yoghurt dip) to temper the heat.

Bologna, Italy

In Italy, Bologna is known by locals as 'La Grassa' ('The Fat One'), as the food here is widely considered to be the best in the country. The city is most famous for its bolognese sauce and bologna sausage, but you will also find parmesan cheese and Parma ham here. There is an amazing range of dining options on offer, from street markets and cosy trattorias to fine-dining establishments − something for all tastes and budgets.
